Low carb dinner or pancakes... though choice (NOT)

Today was supposed to be a low carb day.... today is also Fat Tuesday AKA Pancake day.  What is a girl to do?  Make pancakes!  That's what!!

Warning... this recipe is not healthy and not unprocessed.  I used good old fashioned all purpose white flour.  I'm not even sure why I have it in my house (as I type this I'm remembering that I bought it to make play dough when we were studying land forms).

Anyway.... here is the recipe:


Ingredients 

Original recipe makes 8 servings






Directions

  1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.







They were very fluffy and very delicious.  I don't regret my choice at all.... although I will go do some sit ups now.....
